#128 The Case of Greek Salad

Greek Salad

1 cup seeded, chopped cucumber
1 cup seeded, chopped tomato
1/2 cup Greek olives, pitted
1/8 cup minced onion
1/2 yellow pepper, chopped
2 tablespoons olive oil
1/2 cup feta, crumbled
vegetable seasoning

Toss together all the ingredients, including vegetable seasoning to taste.


Serves 2.

PS For the vegan option, replace the feta with Vegan Greek Style Sheese or cubes of firm tofu, marinated overnight in a brine of 1/8 cup salt/2 cups water then rinsed. Lighter and just as delicious!

    1. Thanks so much Bonnie! My character Becki and I share the same predicament. They say write what you know so I did. Maybe I needed to rant just a bit.

      I'm all about reading entertainment and healthy delicious food so I doubt if I'll embellish much in the future, even if the cancer journey provides the twists and turns of a dramatic story. Unless I can incorporate it into a mystery. Now that gives me an idea...

#110 The Case of Poutine

"Poutine is a typical Canadian dish (originally from Quebec ), made with French fries , topped with brown gravy and curd cheese ."—Wikipedia N utritionists worldwide may be screaming in horror that poutine has captured the world by storm but, proud Canadian that I am, I'm shouting, "Yippee!" To be sure, vegetarians are reputed to eat more along the lines of tofu, broccoli and brown rice but an occasional poutine won't kill us. In fact, fast-food poutine makes quite a comforting indulgence! Did you know that poutine gravy, which is generally made from a mix, is vegetarian? Valerie of McCormick Canada Inc. confirmed to me by phone that Club House Brown Gravy Mix contains no meat products. Silly to write out a recipe. All you do is sprinkle French fries with cheese curds then pour brown gravy over top.
