The Case of Cheese Topping for Fruit

You can meet someone in person or online and like him or her right of the bat. That's the case with my friend, and Cynthia's fellow Imajin Books author, Kenna McKinnon. Kenna has been doing a blog tour and on, this, the last day I asked her to share one of her favourite veggie recipes. I have purchased all the ingredients and I'm looking forward to trying it myself. I said to Kenna, "I bet I could serve this as a fruit dip as well as a topping." She agreed it would make a great dip too.

Cheese Topping for Fruit

8-oz-carton cream-style cottage cheese
1/4 cup sour cream
2 tablespoons brown sugar
1 tablespoon dark rum (or flavoring)
cinnamon

Drain cheese and press through a sieve.

Combine with sour cream, sugar and rum.

Put in small bowl and sprinkle generously with cinnamon. Chill until serving time.

Spoon over fresh berries or pineapple.

Serves 6.

Whether you believe in Bigfoot or not, Squatchers (a First Nations word for "white men who go into forest and see nothing") spend many hours, days and weeks searching for "Squatches". If the beasts are intelligent as Errl is, they will not make themselves visible to humans! I wouldn't.

  1. Kenna, thank you so much for offering this recipe on my blog. As I hinted I'd do, I made it myself by blending the ingredients I had on hand (cottage cheese, sour cream, white sugar, 1/8 tsp vanilla, no cinnamon) and served it as a dip for fruit. It reminded me so much of a recipe my mother made as a topping for her jellied strawberry rhubarb salad. I never really got into her strawberry rhubarb molded salad, but I LOVED, LOVED, LOVED her cream cheese and marshmallow topping. And I LOVE, LOVE, LOVE your Cheese Topping for Fruit! I'm sure it's healthier than Mom's topping too. Wishing you good luck on the last day of your BIGFOOT BOY sale!

#110 The Case of Poutine

"Poutine is a typical Canadian dish (originally from Quebec ), made with French fries , topped with brown gravy and curd cheese ."—Wikipedia N utritionists worldwide may be screaming in horror that poutine has captured the world by storm but, proud Canadian that I am, I'm shouting, "Yippee!" To be sure, vegetarians are reputed to eat more along the lines of tofu, broccoli and brown rice but an occasional poutine won't kill us. In fact, fast-food poutine makes quite a comforting indulgence! Did you know that poutine gravy, which is generally made from a mix, is vegetarian? Valerie of McCormick Canada Inc. confirmed to me by phone that Club House Brown Gravy Mix contains no meat products. Silly to write out a recipe. All you do is sprinkle French fries with cheese curds then pour brown gravy over top.
