Tofu Cubes with Peanut Sauce
These are perfect in summer when it's too damn hot to do much cooking. Add a simple side of your choice and you've got supper, in a jiffy!
3 lb firm tofu, cubed
vegetable seasoning to taste
1/3 cup smooth peanut butter
1 tablespoon soya sauce
1 tablespoon lime juice
1 tablespoon maple syrup
3/4 cup light coconut milk
4 tablespoons water (if needed to thin)
1 clove garlic
pinch chilli pepper flakes
Divide the tofu cubes between four plates and season to taste with the vegetable seasoning.
Add dipping bowls of Peanut Sauce, made by blending together the peanut butter to chilli pepper flakes until smooth.
Serves 4.
