#242 The Case of Acorn Squash

 

This is not so much a recipe as a reminder to make yourself a meal using delicious Acorn Squash.

Many people roast Acorn Squash. I cut it in half crosswise, seed it, slice a bit off the pointier end so that that half will also sit flat, then steam both halves face down in a colander over a pot of boiling water. When fork-tender, I set them upside right on plates, drop a tablespoon vegan baking stick into each hollow to melt, then salt and pepper to taste. Close to nature. Close to perfect.
