3 cups water
2 cinnamon sticks
peel of a small orange

1 cup long-grain white rice
3 cups oat milk
195-ml-can sweetened condensed coconut milk
Simmer the water, cinnamon sticks, orange peel and salt, covered, in a large pot for 15 min.
In a sieve, rinse the rice under cool, running water for 30 seconds then add to the pot and bring back to a boil. Simmer for 17 min.

While the rice cooks, bring the milk to a simmer, whisk in the sweetened condensed coconut milk then remove from the heat.
Once the rice is cooked, remove the cinnamon sticks and orange peel. Add the milk mixture to the rice and bring back to a simmer. Cook, stirring, over low heat for 10 min.
Tastes good hot or cold.
If and when you chill it, stir well before serving.
