#201 The Case of Greek Pasta Salad

When I turn one of my salads, such as my Greek Salad, into a pasta salad, I concern myself with shapes. In this case, seeded, chopped tomato turns into grape tomatoes, halved. And feta, crumbled, becomes Vegan Greek Style Sheese (from Bute Island Foods Ltd.), cubed. 

1 cup penne rigate, cooked and rinsed under cold water
1 cup seeded, chopped cucumber
1 cup grape tomatoes, halved
1/2 cup Greek olives, pitted
1/8 cup minced onion
1/2 yellow pepper, chopped
1 tablespoon olive oil
1/2 cup Vegan Greek Style Sheese, cubed
vegetable seasoning

Toss together all the ingredients, including vegetable seasoning to taste.

Serves 2.

PS If you can't purchase Vegan Greek Style Sheese, cubes of firm tofu, marinated overnight in a brine of 1/8 cup salt/2 cups water then rinsed, substitute very well. I say they're lighter than the faux cheese. Bonus: they use up leftover tofu!

#272 The Case of Almond Cookies

1 cup vegan butter at room temperature 1-1/2 cups sugar, divided 1 teaspoon vanilla 1/4 cup plant-based milk 1-1/2 cups flour 1 cup ground almonds 1/2 teaspoon salt 1 teaspoon baking powder 1/2 cup sliced almonds   In a large bowl, beat the butter with 1 cup of the sugar for 2 min.   Beat in the vanilla and milk for 1 min.   In a smaller bowl, mix together the flour, ground almonds, salt and baking powder.   Beat these dry ingredients into the butter mixture for one min.   Refrigerate for 30 min.   Preheat oven to 400ºF.   Form the dough into 14 balls and roll them in the remaining 1/2 cup sugar.   Place 6 of the sugared balls on a baking sheet. With your hands, gently press sliced almonds onto the tops of the balls while flattening them.   Bake for 15 min., until lightly golden.   Let cool a bit on the baking sheet then finish cooling on a rack.   Repeat until you have baked all the cookies.   Eat one now!   Makes 14 cook...

The Case of Vegetarian Detective in Italy

B uon giorno!   I feel like a snob saying, "I'm just back from Italy." That's me: jetsetter. Yeah, right!   But wow...Italy!   I could talk up a storm, and I surely will as I adjust to being back here, six time zones from magnificent Italia . I often ask people who've just travelled what was their favourite part of their trip. If I ask the same of myself, my answer is seeing Michelangelo's sculptures. His Pietà and The Statue of David literally moved me to tears. I just can't believe I saw "him" in person!   So...our plane from Toronto was delayed six hours and we missed the first day of activities, but we still visited Rome, Montecatini, Siena, San Gimignano, Pisa, Vinci, Florence, Cinque Terre and Assisi. Quite the agenda for ten days, including the two flight days, wouldn't you say? But Trafalgar made it work.
